Mary’s Frito Casserole


1 lb lean ground beef

1 pkg taco seasoning

1 16oz can pinto beans or four cups home-made pinto beans.

1 8oz can tomato sauce

1 15oz can diced tomatoes

1 small can sliced black olives

sliced green onion tops

1 8 oz bag shredded Mexican blend cheese

10 oz bag regular Fritos

sour cream


Preheat oven to 350 degrees.

Brown meat and drain if needed.  Add taco seasoning and stir. Add pinto beans, tomato sauce and diced tomatoes. Simmer 5 min. until flavors blend.

To assemble:

Sprinkle layer of  Fritos on the bottom of an oven safe greased casserole dish.

Cover the Fritos with the meat/bean mixture.

Sprinkle meat with olives and onions.

Sprinkle with shredded cheese.

Continue to layer: Fritos, meat/beans, olives/onions, cheese.

End with a Frito layer.

Top that with cheese.

Bake at 350 for about 30 minutes. Remove from oven. Allow to cool slightly.

Serve on a bed of shredded lettuce.

Garnish with sour cream and/or chopped cilantro to taste.
